Gus’ ~ Texas Barbecue Sauce
My dad’s barbecue sauce is REALLY hot and spicy!
I mean burn your lips hot! The flavor is great, but I don’t like it that hot, so to tone down the hot and keep the flavor, by reducing the amount of Tabasco sauce I put in.
Recipe ~ My Version
¼ lb. Butter or oleo
2 large onions, chopped very, very fine with chopper
Lotsa (6 or more big cloves) garlic, pressed through garlic press, or chopped very, very fine with chopper
Sauté till soft, not browned.
How to sauté: Melt butter over a very low heat in a large pot. Add garlic and onions. Cover and simmer about 10 min, stirring often.
ADD:
1 large bottle tomato juice, I use V-8 juice, or sometimes Spicy V-8. I also use the large plastic bottles not the cans, so I can use it to store most of the BBQ sauce.
1 bottle A1 sauce 10oz
1 bottle Heinz steak sauce 10oz
1-2 Tbsp Tabasco sauce
Turn up heat and bring to a boil. When it has come to a full boil , turn off the heat, then add:
½ cup Apple Cider vinegar
1 Tbsp hot dry mustard, mixed with ¼ cup of water (I use beer sometimes)
2 Tbsp sea salt
2 Tbsp fresh ground black pepper
1 Tbsp red pepper flakes
Stir, to mix. Let it cool and pour what you can into the V-8 juice bottle, I also use the A-1 & Heinz bottles. It keeps in the frig as long as you would keep steak sauce.

I’m currently trying to find recipes for A-1 and Heinz steak sauces. Anybody have those already?
